Hey last week I got some DELICIOUS peaches at Walmart for
.50 cents a pound! Then I was there yesterday and they are still the same price! That is a good canning/jam making price. I bought about 25 pounds worth of peaches! Speaking of jam, I also had two coupons for pectin, so I got two small canisters of the flex batch pectin, where you can make any size batch of jam. One of the coupons was from the newspaper (my mom sent it), and one I got online through an email newsletter from Ball canning. You can sign up for their newsletter
HERE On the left side bar click newsletter sign up, fill out the info and then later you will receive a dollar off pectin coupon through your email. Isn't it cute how canning is making a "comeback"? They are having a "National Canning Day" this month! For all us mormons who have been continuing the dying practice for years, we are going to be trendy soon!

Anyway, with all my peaches, I am going to can some and make some jam. And not just regular peach jam, I am making "Blushing Peach Pineapple jam" It is to die for! Here is the recipe:
Blushing Peach Pineapple Jam
5c. peaches, diced or mashed (and peeled of course)
1 c. crushed pineapple
5 c. sugar
Boil above ingredients together for 20 min.
then add:
1 lg pkg. orange or peach jello
6-8 marachino cherries, chopped.
Stir until jello is dissolved. Put in pint jars with hot lids and process in hot water bath (or steam canner) for 10 minutes.
You will notice that this recipe doesn't even require pectin!
However, blueberries and blackberries are
one dollar for an 11 ounce package at Walmart too! So you could do a berry jam that may be cost efficient.
Happy Canning!
